Chilli, Sweetcorn and Tuna Lunchbox Pasta

  • 1 corn on the cob
  • 1 red chilli, de-seeded and finely chopped
  • ½ green pepper, finely chopped
  • 1 celery stick, finely sliced
  • 1 tin of tuna, drained
  • 2 handfuls of fresh rocket
  • 175g pasta, penne, fusilli
  • Drizzle of extra virgin olive oil
  • Squeeze of lemon
  • Fresh milled pepper and a little salt


  1. Cook the corn on the cob for 5 minutes then drain and refresh under cold water.
  2. Cut the kernels of the corn and place into a bowl. Mix with the chopped pepper, celery and chilli. Drizzle over a little oil and a squeeze of lemon.
  3. Cook the pasta until just tender, drain and leave to cool.
  4. Once cool and still a little warm mix the pasta into the vegetables. Now flake over the tuna and season to taste. Pop into a lunch box and keep refrigerated. Serve with a handful of fresh rocket.
