Tuna and Pepper Frittata

  • 1 tbsp olive oil
  • 1 red onion, peeled and finely chopped
  • 1 red pepper, deseeded and finely sliced
  • 185g tin tuna in oil, drained
  • 6 free range eggs
  • Handful of finely chopped fresh herbs (e.g. parsley, chives, coriander)


  1. Preheat the grill to a medium heat. In a large frying pan, heat the oil, add the onion and pepper, and cook gently for 5 minutes or until soft.
  2. Add the tuna.
  3. Crack the eggs into a bowl and whisk with a fork.
  4. Add the herbs.
  5. Turn up the heat slightly, add the eggs to the pan, stir a few times, then leave for 3 minutes until the bottom is cooked.
  6. Put the pan under the grill for 2-3 minutes until the egg is cooked all the way through and is golden on top.
