Spiced Roasted Pumpkin Seeds

Ingredients
- 200g pumpkin seeds
- 2tsp olive oil
- 1/2. tsp chilli flakes
- 1 tsp cumin
- 1 garlic clove, very finely chopped
- 1/2. tsp cayenne pepper
- Juice of 1 lime
Method
- Removing the pith from the pumpkin seeds may be a little time consuming but once you taste what you are about to make it will be worth your while. I even use these simply scattered over salads.
- Wash and pat dry the pumpkin seeds.
- Once dry place onto an oven tray.
- In a small bowl mix the rest of the ingredients, season to taste then drizzle over the seeds and mix well.
- Bake in a pre-heated oven at 180C / gas mark 4 for about 20 minutes occasionally stirring until golden brown.
- Leave to cool a little squeeze over the lime and serve in a nice little bowl.
Tip: Use the seeds from the pumpkin you have used to make our Lightly Spiced Cottage Pie, or you could use The Co-operative Wholefoods Pumpkin Seeds if you wish.
