Serves: 4
Preparation: 25 minutes
Cooking Time: 14 minutes

  • 200g basmati rice
  • 1tbsp oil
  • 4 spring onions (trimmed and finely sliced) or 1 red onion (peeled and finely chopped)
  • 1 pepper (red, orange or yellow), deseeded and chopped

  2. Meanwhile, in a large pan, heat the oil and soften the onion, pepper and chorizo or bacon for 10 minutes.
  3. Steam the peas or beans for a few minutes until just cooked, then add to the chorizo mixture with the rice and lemon zest.
  4. Toast the nuts in a pan until golden and mix everything together.
  5. Sprinkle with herbs and serve.
