Ingredients

  • 1 cup white or brown rice
  • Juice of a lime
  • Handful fresh coriander
  • 1 cup canned black beans (drained and rinsed)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/4 tsp garlic powder or 1 small garlic clove (minced)
  • Salt and freshly ground black pepper (to taste)
  • 1 cup cooked protein of your choice
  • 1/4 tsp dried oregano
  • 1 avocado (sliced or mashed)
  • 1 cup cherry tomatoes (halved)
  • 1/4 red onion (thinly sliced or chopped)

Method

1. Cook the Rice: Cook the rice according to package instructions. Once cooked, stir in a pinch of salt, the juice of 1/2 lime, and a handful of chopped coriander. Set aside.


2. Prepare the Beans: In a small saucepan over medium heat, add the black beans, cumin, paprika, chili powder, garlic, salt, pepper, and a splash of water or lime juice.
Simmer for 5–7 minutes, stirring occasionally, until heated through and fragrant.


3. Cook the Protein (if using): In a separate pan, heat a little olive oil over medium-high heat. Add your chosen protein and season with chili powder, cumin, paprika, oregano, salt, and pepper.
Cook for 5–10 minutes, or until fully cooked and well browned. Finish with a squeeze of lime juice if desired.


4. Assemble the Burrito Bowls: Divide the cooked rice between two bowls.
Top each with black beans, cooked protein (if using), cherry tomatoes, avocado, sweetcorn, and red onion.


5. Finish and Serve: Drizzle over the garlic-lime sauce, sprinkle with fresh coriander, and add any extra toppings like jalapeños or cheese.


Serve with lime wedges or hot sauce on the side if desired.
