Oven cook: Pre-heat oven to 180°C, Gas Mark 4, Fan 160°C. Remove joint from packaging. Season joint with salt and pepper. Allow joint to come up to room temperature for approximately 30 minutes. Pre-heat frying pan to a high heat.
During cook: Add 2 tbsp of oil to the frying pan. Add the joint and seal on all sides for 3-4 minutes to lock in the juices. Place joint in an ovenproof dish and cover with foil and cook.
For rare, cook for 6 minutes per 100g.
For medium, cook for 7-8 minutes per 100g.
For well done, cook for 9 minutes per 100g.
After cook: Remove joint from oven and allow to rest for 20 minutes before serving. Remove string and carve against the grain.

For best quality, freeze as soon as possible and always within the use by date. Use within 1 month. Defrost in a fridge for 24 hours. Defrost thoroughly before cooking and use within 24 hours.
Keep in the fridge, cook and eat within 24 hours of opening. Don't exceed the use by date.
